red beet fennel salad with oranges and mint
ingredients
- roasted red beets
- 1 bulb fennel
- 1 can manderin oranges
- 1 green apple
- juice of 1 lemon
- fresh mint
- olive oil
- salt and pepper to taste
directions
add all ingredients, and toss with lemon juice and olive oil. Chill for 1 hour before serving
