Greek-Style Shrimp Linguine
ingredients
- 8 oz. cooked linguine
- 1 tbl. olive oil
- 20 large shrimp (approx. 1 pound)
- 2 garlic cloves
- 1 tsp. dried oregano
- 1/4 tsp. crushed red pepper
- 1 (14.5 oz) can diced tomatoes, undrained
- 3/4 c. crumbled feta cheese
- 2 tbl. chopped basil

Heat oil in large skillet over medium high heat. Add shrimp, garlic, dried oregano, and red pepper. Stir-fry. Add tomatoes, reduce heat and simmer uncovered.

Add cooked linguine and toss.

Add feta cheese, toss, and top with basil.
