Tortellini Soup
ingredients
- 2 T. olive oil
- 2 ozs. pancetta or bacon, finely diced
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 (49.5 oz) can chicken broth
- 2 tsp. dried Italian seasoning
- 18 oz cheese filled Tortellini
- 1 (28 oz) can crushed tomatoes, in puree
- 8 oz. fresh spinach, chopped
- 1 cup fresh grated parmesan cheese

In large skillet, heat oil, add onion, garlic, and bacon. Cook until brown (10-15 minutes). Add chicken broth and Italian seasoning. Bring to a boil. Add Tortellini and tomatoes. Cook on low boil for 3-5 minutes.

Right before serving, add spinach (a small amount at a time). Cook for 2 minutes, just until wilted.

Top with cheese for serving.
notes
Only add enough spinach for one meal so it does not discolor. When reheating, add fresh spinach again. Also, if freezing, do not add the spinach.
