Soup ~ Potato Ham
ingredients
- 3 1/2 potatoes, peeled and diced
- 1/2 c. celery, diced
- 1/2 c. carrots, finely shredded
- 1/3 c. onion, finely chopped
- 3/4 c. ham, cooked and diced
- 3 1/4 c. water
- 2 T. chicken bouillon
- salt to taste
- pepper to taste
- 5 T. rice flour
- 2 c. rice milk
- 3 T. olive oil
- 3 c. cheddar cheese, shredded (optional)

Combine potatoes, celery, carrots, onion, ham and water in stock pot. Bring to boil and cook until potatoes are tender, approx 10-15 minutes. Stir in bouillon, salt and pepper.

In saucepan warm olive oil over medium-low heat. Whisk in flour with a fork until thick, about 1 minute. Slowly stir in milk until all has been added. Continue stirring over medium-low heat until thick, 4-5 minutes.

Stir milk mixture into stock pot and cook soup until heated through. Lightly smash down vegetables until chunky and stir.

If desired, add cheese and stir until melted.
