FABULOUS FENNEL
While essentially a braising method; It can also go from the top of the stove to the table, or you can add the cheese and then bake it for a bit.
ingredients
- Use small fennel bulbs, about 1/4 per person.
- Cut off most of the tops, and dice down from the remaining top to quarter.
- Try to keep the quarters intact – cool look.
- 1 small onion
- 3-4 tbsps oil or butter
- 1/4 cup diced prosciutto
- salt and pepper
- 1/3 to 1/2 cup chicken stock
- Grated emmenthal and/or parmesan

Fry a small onion, chopped, in oil and butter.

Add the diced prosciutto (or ignore this).

Add salt and pepper as desired.

Add the fennel bulb quarters and brown a bit.

Then add the chicken stock and cook fennel until tender (15 minutes or so) at low heat.

Top with some grated cheese and bake to melt if desired.

Especially good with turkey and chicken, but also good vegetarian if you leave out the ham.
