Turkey and White Bean Chili

ingredients

  • 2 Tbls. oil
  • 1 lb. ground turkey
  • salt and pepper
  • 1 large onion, chopped
  • 2 jalepenos, diced (seeded)
  • 2 tsp. cumin
  • 1 Tbls. tomato paste
  • 2 cans cannellini beans
  • 2 cans chicken broth
  • 1 cup water
  • sour cream
  • cilantro
  • sliced radishes

directions

In a large pot, heat oil over medium heat. Add turkey and season with salt and pepper. Cook, breaking up turkey, until browned, about 9 minutes. Add onion and jalepenos, and cook until soft, 3 minutes. Stir in cumin and tomato paste; cook 2 minutes. Add drained and rinsed beans, chicken broth, and water. Bring to a boil. Reduce heat, simmer until thick, 15-20 minutes. Garnish with sour cream, cilantro and radishes.
