Hot Fried Green Tomatoes with Feta Cheese
ingredients
- 1 cup of yellow cornmeal
- 1/2 cup flour
- 2 Tbsp grated Romano cheese
- 1 tsp crushed red pepper flakes
- 1 tsp salt
- 3 large green tomatoes
- Salt, ground pepper and sugar
- 2 beaten eggs
- 1/4 cup melted butter
- 1/4 cup canola oil
- 1 cup crumbled feta cheese

Slice the tomatoes in 1/4 inch pieces. Sprinkle with salt pepper and sugar on both sides. Let sit for 15 minutes. Combine the first 5 ingredients in a bowl and mix well. Dip the tomato slices in the egg and then in the cornmeal mixture.

Heat the butter with the oil in a large frying pan. Add the tomato slices and fry until lightly brown. Drain on paper towels.

Serve on individual plates topped with feta cheese and a sprig of parsley.
