Sweet and Sour Pork
Dave loves this one. You would have to substitute something for the pork. Tofu maybe.
ingredients
- 1 1/2 Lbs. lean pork, cut in 2X1/2 inch strips (or pork substitute)
- 2 Tbs hot oil
- 1 Chicken bouillon cube (opt)
- 1 1 lb 4 0z can pineapple chunks
- 1/4 C. Brown sugar
- 2 Tbs Cornstarch
- 1/4 C. Vinegar
- 1 Tbs Soy sauce
- 1 Med Green Pepper, cut in strips
- 1/4 C. Thinly sliced onion
- Hot cooked rice

Brown pork slowly in hot oil. Add one cup water, bouillon cube (or substitute veg. stock), and 1/4 tsp salt. mix well. Cover and simmer til tender, about one hr (less if substituting tofu). Meanwhile, drain pineapple, reserving syrup. Combine brown sugar and cornstarch; add reserved pineapple syrup, vinegar, soy sauce, and 1/2 tsp salt. Cook and stir over medium-high heat til thickened and bubbly.

Remove from heat. Add sauce to pork; mix well. Stir in pineapple, green pepper, and onion. Cook over low heat 2-3 minutes, or until vegetables are tender-crisp. Serve over rice.
