Beef-Barley Soup
ingredients
- 1 Tbsp. vegetable oil
- 1 1/2 lb. beef stew meat, cut into cubes
- 8 cups water
- 2 beef-bouillon cubes
- garlic powder
- 1 14-oz. can stewed or diced tomatoes
- 1 cup carrots - sliced
- 1 cup chopped onion
- 1 cup sliced celery
- 1 cup barley
- 2 tbsp. parsley
- 1/2 tsp. salt
- 1 1/2 tsp. pepper

1. In a large pot, heat oil over medium heat. Add beef; cook, stirring often, until browned.

2. Add 8 cups water, and garlic powder. Bring to boil. reduce heat, cover & simmer 1-1 1/2 hour or until meat is fork tender.

3.Add remaining ingredients, cover & simmer 1 - 1 1/2 hours or until vegetables are tender.
