Red Pepper Pesto Pizza
“Your Body is a Wonderland” floats in the background as we sit on the lawn of Ravinia enjoying our pizza appetizer and a bottle of wine.
John Mayer’s words move us to leave the concert a little early to explore each other’s wonderland.
ingredients
- 3 Tbsp reduced-fat ricotta cheese
- 1 tsp ready-made roasted garlic
- 1 Flatout flatbread or whole-wheat pita
- 1 Tbsp ready-made pesto
- 2 Tbsp ready-made roasted red peppers
- 3 Tbsp grated reduced-fat mozzarella cheese
- 1 tsp pepper

1. Stir together the ricotta and roasted garlic, blending well.

2. Spread the mixture on the flatbread. Top with dollops of pesto, peppers, and mozzarella. Season with pepper.

3. Bake at 375°F for 6 minutes. Makes 1 serving
