Ravioli (Dough and Fillings)

Grandma Jo’s Special Recipes

ingredients

  • DOUGH:
  • 3 C. flour
  • 3 eggs
  • 1/2 C. water (less 2 T.)
  • CHEESE & RAISIN FILLING:
  • 2 C. grated cheese (Italian blend/co-jack etc)
  • 1/2 C. raisins, soaked in water
  • 2 eggs
  • 3 T. sugar
  • pepper, parsley, basil, red pepper flakes if desired
  • CHEESE & CHICKEN FILLING:
  • 1 C. cooked chopped chicken
  • 1 C. grated cheese
  • 1 egg
  • salt, pepper, parsley, basil, garlic

directions

  • 1

    Roll dough thin in pasta machine. Use ravioli form, and fill with filling of choice. If filling is too wet, add cheese until desired consistency is reached.

    Tray freeze for future use, or cook immediately.

notes

One batch of dough usually is enough for one batch of each type of filling, with some dough left over to make noodles.
