Shanna's Turkey Lasagne
Excellent recipe that’s worth the time!
ingredients
- 8 oz. lasagna noodles, cooked el denté
- 1 pound ground turkey
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 (16 oz) can peeled tomatoes, drained and chopped
- 1 (8 oz) can tomato sauce
- 1 (6 oz) can tomato paste
- 2 tsp. basil
- 1 tsp. oregano
- 1/2 tsp. thyme
- 2 tsp. fennel seed
- 1/4 tsp. red pepper flakes
- 2 T. fresh parsley
- 1 egg, beaten
- 2 c. lowfat cottage cheese or ricotta
- 1/2 tsp. cracked pepper
- 3/4 c. parmesan cheese
- 8 oz. shredded mozzarella cheese

Preheat oven to 375°. In skillet brown turkey, onion and garlic. Stir in tomatoes, tomato paste, dried seasonings, and 1 T. of parsley. Simmer 15 minutes and set aside.

Meanwhile mix egg, cottage cheese, pepper, 1/2 c. parmesan cheese, and remaining parsley. Set aside.

In 9 X 13 baking pan layer 1/2 noodles, 1/2 cottage cheese mixture, 1/2 meat mixture, and 1/2 mozzarella. Repeat again. Sprinkle remaining parmesan over the top. Bake for 30 minutes.
