Healthy Cookies
These extra large, energy-packed cookies are a perfect after-workout treat.
ingredients
- 2 cups oats
- 1 cup whole wheat flour
- 1/3 cup raisins
- 1/2 cup unsalted peanuts
- 1 cup brown sugar
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1 1/2 tsp.ground ginger
- 1/2 tsp. baking powder
- pinch of salt
- 3/4 cup sunflower oil
- 3/4 to 1 cup of milk or water
directions
Preheat the over to 400°. Mix the dry ingredients in a large bowl. Add the oil and mix well. Stir in enough milk or water to make a firm mixture. Place heaped spoonfuls on an oiled baking tray and flatten them into 3 inch rounds. Bake for 10 minutes or until golden at the edges. Cool on a rack.

Add the milk or water gradually, stopping as soon as the mixture is firm enough to form into balls.
