Grandmother and PaPaw parked their trailer in the front yard. David and I would play inside. We took that trailer to the Ozarks and Smokies several times growing up.
ingredients
- 1 cup rice
- 1 Tsp. salt
- 3 cups water
- 2 chicken bullion cubes
- 2 cups hot water
- 2 stalks celery
- 1 small onion
- 1 bell pepper
- 1 can cream of mushroom soup
- 4-6 chicken breasts
- Dash of cooking oil
directions

Cook rice in bullion and hot water with salt. Wash and drain. Put into a casserole and cook for one hour.

Place chicken in skillet, brown in oil.

Saute celery, onion and bell pepper in butter.

Place onion mixture on bottom of casserole dish, then mix 1 can cream of mushroom soup and 1/2 (scant) can of cherry wine (cooking wine).

Pour this mixture over chicken breasts.

Cook also one hour at 350 degrees.
