Roasted Tomatillo Green Salsa
The best green salsa - use in Bean and Cheese Enchiladas, as the secret ingredient in the Black Bean Burger sauce, or with tortilla chips.
ingredients
- 1 pound tomatillos, husked
- 1 white onion, peeled and quartered
- 4 garlic cloves
- 1 jalapenos
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 cup chopped cilantro leaves
- juice from 1/2 lime

Preheat oven to 400°.

On a baking tray, roast tomatillos, onion, garlic and jalapeno for 12 to 15 minutes. Transfer the roasted vegetables to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky.

Add another jalapeno pepper to make a hotter version.
