Irish Soda Bread
A hearty soda bread that seems to get even better with time - made for the first time on St. Patrick’s day 2008 in Creel, Mexico.
ingredients
- 3 cups whole wheat flour
- 3 cups all-purpose flour
- 1 tbs. salt
- 1/4 cup packed light brown sugar
- 2 tsp. baking soda
- 1/4 cup oatmeal, rolled oats, extra whole wheat flour
- 12 tbs. (1 1/2 sticks) unsalted butter chopped into small pieces
- 2 cups sour milk or whole milk soured with 1 tbs. of mild vinegar

Pre-heat the oven to 375. Mix together all dry ingredients. Cut in butter. Pour in milk, moisten thoroughly. Use wet hands to pull together and shape into a dome measuring about 8 inches in diameter.

Transfer to a baking sheet. Cut an “x” 1/2 deep across the top of the dome. Bake for 60-70 minutes. To test, pinch the bottom edge - it should be firm.
