A hearty soda bread that seems to get even better with time - made for the first time on St. Patrick’s day 2008 in Creel, Mexico.

ingredients

  • 3 cups whole wheat flour
  • 3 cups all-purpose flour
  • 1 tbs. salt
  • 1/4 cup packed light brown sugar
  • 2 tsp. baking soda
  • 1/4 cup oatmeal, rolled oats, extra whole wheat flour
  • 12 tbs. (1 1/2 sticks) unsalted butter chopped into small pieces
  • 2 cups sour milk or whole milk soured with 1 tbs. of mild vinegar

directions

  • 1

Pre-heat the oven to 375. Mix together all dry ingredients. Cut in butter. Pour in milk, moisten thoroughly. Use wet hands to pull together and shape into a dome measuring about 8 inches in diameter.

  • 2

Transfer to a baking sheet. Cut an “x” 1/2 deep across the top of the dome. Bake for 60-70 minutes. To test, pinch the bottom edge - it should be firm.
