2 cups flour
⅓ cup sugar
2 tsp. backing powder
2 tsp. salt
½ cup butter, cold
2 eggs
¼ cup orange juice
1 tsp. vanilla extract
1 tsp. grated orange rind
¾ cup chocolate chips
Pre-heat the oven to 425. Mix the dry ingredients together. Add the butter and cut in with a pastry blender or a fork. Add the remaining ingredients - mix in the chocolate chips last. It’s easiest to use your hands at this point. Divide into two balls and flatten each into a 6" circle. Cut into quarters and place onto a baking sheet on parchment paper. Bake for 18-20 minutes. Let cool, then eat with tea.
