Orange Chocolate Scones

from Angry Chicken’s Mailorder #9

  • 2 cups flour

  • ⅓ cup sugar

  • 2 tsp. backing powder

  • 2 tsp. salt

  • ½ cup butter, cold

  • 2 eggs

  • ¼ cup orange juice

  • 1 tsp. vanilla extract

  • 1 tsp. grated orange rind

  • ¾ cup chocolate chips

  • Pre-heat the oven to 425. Mix the dry ingredients together. Add the butter and cut in with a pastry blender or a fork. Add the remaining ingredients - mix in the chocolate chips last. It’s easiest to use your hands at this point. Divide into two balls and flatten each into a 6" circle. Cut into quarters and place onto a baking sheet on parchment paper. Bake for 18-20 minutes. Let cool, then eat with tea.
