Mexican Brittle

ingredients

  • 2 cups salted cashew halves
  • 10 tbsp unsalted butter
  • 1/2 cup sugar
  • 1/4 cup packed golden brown sugar
  • 1 tbsp light corn syrup
  • 1 tsp cayenne pepper
  • 1/4 tsp salt

directions

Butter a baking pan. Combine all ingredients in a large skillet. Stir over low heat until the butter melts and sugars dissolve. Increase heat to medium and boil stirring constantly until mixture turns golden brown, thickens and begins to mass together. (About 10 - 10+ minutes.) To test: have a glass of cold water by the stove. When you think mixture is ready, drop a little of the mixture into the glass of cold water. Check the consistency. If it hardens, then it is ready. Immediately pour out onto prepared baking sheet, spreading evenly. Cool completely. Break into pieces. ENJOY!
