Easy Vegetable Pie
ingredients
- 1 c chopped fresh broccoli, or cauliflower, or spinach
- 1/2 c (or less) chopped onion
- 1/2 c (or less) chopped green pepper
- 1 c shredded cheddar cheese
- 1 1/2 c milk
- 3/4 c Bisquick
- 3 eggs
- (1 tsp salt)
- 1/4 tsp pepper

Heat oven to 400 degrees. Lightly grease pie plate, 10 x 1/2 inch. Cook veg of your choice in 1 inch water (just wash spinach, drain, and steam for a minute). Drain thoroughly. Mix vegetable with onion, green pepper and cheese. Spread in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean (about 30 min). Let stand 5 min before cutting.

Frozen veg can be used, thaw, drain, do not cook.
