Fettuccini Casserole
This is an easy dish to serve as a side dish with chicken breasts or steak or pork chops for a nice dinner. I love the leftovers as a main course with broccoli on the side. It’s a big crowd pleaser.
ingredients
- 2 leeks, finely chopped
- 3 tbsp butter
- 1 cup chicken broth
- 1 cup cream
- 1 cup plain yogurt
- 1/4 cup parmesan cheese
- 2 tbsp chives, chopped
- 1/2 pound fettuccini noodles, cooked

Cook the leeks in butter and broth for 5 minutes. Remove from the heat and stir in the cream. Mix in the rest of the ingredients and pour into a greased one-quart casserole dish. Bake at 300 degrees for 30 minutes.

The recipe can be done ahead and refrigerated. If refrigerated, cook 45 minutes.
