Lemon Roast Potatoes

ingredients
- 8-10 medium Youkon Gold potatoes, peeled and cut into wedges
- 1 cup water
- 1/2 cup fresh lemon juice
- 1/3 cup Olive Oil
- 3 cloves garlic, minced
- 2 tsp. salt
- 1 tbs. oregano
- 1 tsp. freshly grounf pepper

Preheat oven to 350° CHECK!!!!!!

Scatter potatoes wedges into a lightly greased 9X13 baking dish.

In a bowl, wisk together remaining ingredients.

Pour mixture over potatoes, being sure to coat each poece.

Bake for 2 hours, stirring once.

Porter seemed to grow up so quickly. He was sitting up and moving before we knew it.
