Honey & Nut Muffins
ingredients
- Cooking spray
- 1 c. whole wheat flour
- 1 c. all purpose flour
- 1 1/2 tsp. baking soda
- 1/8 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 c. low fat buttermilk
- 3 T. honey
- 2/3 c. brown sugar
- 4 T. canola oil
- 2 large eggs
- 1/2 c. toasted walnuts, coarsely chopped
- 2 T. shelled sunflower seeds
- 3 T. ground flax seeds
- 1/4 c. oats

Preheat oven to 375 degrees. Spray a 12 muffin tin with cooking spray.

Combine flours, soda, salt and cinnamon in a large bowl and stir well. In a separate bowl combine buttermilk, honey, sugar, oil and eggs. Whisk well. Add the flour mixture and stir until combined.

In a small bowl, mix together nuts, half of the sunflower seeds, flax seeds and oats. Fold into batter and stir until combined.

Spoon evenly into muffin tin and top with remaining sunflower seeds.

Bake for 18 to 20 minutes.
