Cook’s Illustrated Perfected French Toast
ingredients
- 8 large slices hearty bread (see note)
- 1 1/2 cups whole milk, warmed (see note)
- 3 large egg yolks
- 3 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 1/4 teaspoon table salt
- 1 tablespoon vanilla extract

notes
To prevent the butter from clumping, warm the milk in the microwave. Variations: Process ingredients in a food processor. Makes 1/2 cup. Sprinkle 1 T of crumbs over one side of soaked bread. Cook starting with crumb mixture-side down.
