Chicken Marsala
ingredients
- 3 Large Whole Chicken Breasts, (split, skinned, boned)
- 1 Large Egg (beaten)
- 1/4 Cup Milk
- 1/2 Cup Flour
- 1 1/2 Teaspoon Salt
- 1/4 Teaspoon Pepper
- 3 Teaspoon Olive Oil
- 3 Teaspoon Butter
- 1 Small Onion (chopped)
- 1/2 lb Small Mushrooms (sliced)
- 1 Clove of Garlic (mashed)
- 1 Cup Marsala Wine
- 1 Envelope Instant Chicken Broth
- 1 Lemon (sliced)
directions
Flatten chicken between wax paper (1/4 in). Combine egg and milk in a shallow dish. Combine flour, salt, pepper on wax paper. Dip chicken in egg mix, then flour to coat. Chill for 2 hours. Heat oil and butter in large skillet, brown chicken, remove to platter. Sauté onion, mushrooms and garlic till barely tender, remove to platter. Add wine and chicken broth to pan; boil uncovered for 10 minutes to reduce liquid. Return chicken and vegetables to pan. Heat thoroughly. Garnish with lemon slices.
