Summer Orzo
ingredients
- 1 16oz package of orzo
- 4 large seeded tomatoes, chopped, and drained (1 1/2-2cups)
- 1 large zucchini
- 1 large onion
- 2 green peppers
- 3 T. olive oil
- 1 T. minced garlic
- 1 tsp. each of oregano, chives, and parsley
- 1 pkg Italian Turkey Sausage
- salt and pepper to taste
- freshly grated parmesan cheese
directions

Chop onion, zucchini, and peppers and saute in garlic and 1 T. olive oil.

Cook sausage in skillet or grill and chop and add to veggies.

Cook orzo according to package directions. Toss with tomatoes, olive oil, salt, pepper, herbs, chives. Mix in sauteed onions, zucchini, peppers, & turkey sausage.

Sprinkle with fresh parmesan cheese.

Serve warm.

Great as a vegetarian dish without the turkey sausage!
