Red Velvet Cake

ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 tablespoons cocoa
  • 1 ounce liquid red food coloring
  • 2 1/2 cups cake flour
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 tablespoon white vinegar
  • 1 teaspoon baking soda

    Preheat oven to 350°F.

    Cream butter, sugar, and vanilla in a large mixing bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix cocoa and food coloring in a small bowl to make a paste. Add to egg mixture, and beat well. Sift flour and salt into a bowl. Add dry ingredients alternately with buttermilk to egg mixture, beginning and ending with dry ingredients and beating well after each addition. Mix vinegar and baking soda in a small bowl. Pour into 3 well-greased 8-inch cake pans.

    Bake for 20 to 30 minutes or until a pick inserted in the center comes out clean. Cool in pans for 10 minutes. Remove to a rack to cool completely. Spread icing between layers and on tops of sides
