ROAST BEEF AND ARUGULA SANDWICHES WITH HORSERADISH CREAM

ingredients

  • 3 Tbls Light sour cream
  • 1 Tbls Prepared horseradish, drained
  • 1 Tbls Dijon mustard
  • 1/8 teas Salt
  • 1/8 Black pepper
  • 2 cups Arugula lettuce
  • 8 Slices pumpernickel bread or bread of desire
  • 1/2 pound Very thinly sliced lean deli roast beef
  • 1 Large tomato, thinly sliced
  • 1 small Red onion, thinly sliced

directions

    Combine the sour cream, horseradish, mustard, salt and pepper in a small bowl.

  • 2

    Put 1/2 cup arugula on each of 4 slices of the bread, divide the roast beef, tomato, and onion among the sandwiches. Top each with horseradish cream and the remaining bread slices. Cut the sandwiches in half on the diagonal.
