ZUCCHINI WALNUT BREAD

ingredients

  • 4 eggs
  • 1 C salad oil
  • 2 C sugar
  • 3 1/2 C flour
  • 1 1/2 t baking soda
  • 1 t cinnamon
  • 1 1/2 t salt
  • 3/4 t baking powder
  • 2 C grated, unpeeled zucchini
  • 1 C raisins
  • 1 C chopped walnuts
  • 1 t vanilla

    Beat 4 eggs. Gradually beat in sugar. Add oil,blend well. Mix all dry ingredients,then gradually add to egg mixture. Add squash, nuts, raisins, and vanilla. Blend well.

    Bake at 350 degrees in greased and floured bread pans. Baking time will vary depending on size of loaf pans.

    Start checking at 45 minutes, could take up to 60 min. or more. Done when tooth pick comes out clean.
