SAUSAGE SOUP

ingredients

  • 1 tbsp or olive oil
  • 1/2 lb (250 g) hot or sweet sausage
  • 2 med. potatoes – peeled
  • 2 med. carrots – thinly sliced
  • 1 large onion – diced
  • 2 celery stalks – diced
  • 1 garlic clove – minced
  • 1 tbsp. italian seasoning
  • 2 1/2 – 3 cups chicken stock
  • 1 large can of diced tomatoes
  • 1 9 oz. (540 m) can chick peas
  • salt & pepper

directions

  • 1

    Brown sausage cut into small pieces. Add potatoes, carrots, onion, celery, garlic and seasoning.

  • 2

    Cook, stirring 5 minutes or so.

  • 3

    Add chicken stock and tomatoes, salt & pepper.

  • 4

    Cover and simmer for 1 hr.

  • 5

    *I usually pre-boil the potatoes.
