SAUSAGE SOUP
ingredients
- 1 tbsp or olive oil
- 1/2 lb (250 g) hot or sweet sausage
- 2 med. potatoes – peeled
- 2 med. carrots – thinly sliced
- 1 large onion – diced
- 2 celery stalks – diced
- 1 garlic clove – minced
- 1 tbsp. italian seasoning
- 2 1/2 – 3 cups chicken stock
- 1 large can of diced tomatoes
- 1 9 oz. (540 m) can chick peas
- salt & pepper

Brown sausage cut into small pieces. Add potatoes, carrots, onion, celery, garlic and seasoning.

Cook, stirring 5 minutes or so.

Add chicken stock and tomatoes, salt & pepper.

Cover and simmer for 1 hr.

*I usually pre-boil the potatoes.
