Chocolate Meringue Pie

ingredients

  • Pie filling:
  • 1 1/4 cup sugar
  • 1/2 cup cocoa
  • 1/3 cup cornstarch
  • 1/4 tsp. salt
  • 3 cups milk
  • 3 egg yolks, beaten
  • 3 T. margarine
  • 1 1/2 tsp. vanilla
  • Meringue:
  • 1/2 cup water
  • 1/4 cup + 2 T. sugar
  • 1 T. cornstarch
  • 3 egg whites

    Combine first 4 ingredients in pan and gradually add milk.

    Cook over medium heat, stirring constantly until it thickens and comes to a boil.

    Boil 1 minute & remove from heat.

    Add some hot mixture to beaten yolks and return egg mixture to pan cooking until mixture comes to a boil.

    Cook 2 minutes stirring constantly.

    Remove from heat and add vanilla and margarine. Bake at 425° for 5-7 minutes. Set aside and make meringue.

    Blend water, sugar and cornstarch in saucepan over medium heat until it thickens and in transparent. Set aside and cool. Beat egg whites until foamy and add cooled cornstarch mixture. Beat 3 minutes until stiff. Top pie and bake until meringue is browned and set. Cool completely and refrigerate.
