Parmesan Mashed Potatoes

ingredients

  • 3 lbs of red potatoes, unpeeled
  • 2 tablespoons of salt
  • 1.5 cups of half & half
  • 1/4 lb. of unsalted butter
  • 1/2 cup of sour cream
  • 1/2 cup of grated parmesan cheese
  • 1/2 teaspoon of fresh ground pepper

  • 1

    - Broil and simmer the potatoes with 1 tablespoon of salt. Cover for 25 to 35 minutes until they are completely tender. Drain

  • 2

    - Mix the potatoes with an electric mixer

  • 3

    - Add butter, sour cream, half & half, parmesan, salt & pepper

  • 4

    - put into an baking dish and cook at 350 degrees for 5-10 minutes
