Corn Scallop

  • Ingredients
  • 1 – 8 oz. can creamed corn
  • 1 – 8 oz. can whole kernel corn (undrained)
  • 1/2 cup butter melted (1 stick)
  • 1 cup sour cream
  • 1 – 8 1/2 oz. Corn muffin mix (Jiffy brand)
  • 2 eggs – slightly beaten
  • 1 can chopped green chili peppers
  • Optional: 2 drops Tabasco sauce)

    Preheat oven to 350 degrees.

    Mix all ingredients together and pour into an 8” x 8” pan.

    Bake for 35 to 40 minutes.

  • 4

    (You can double this recipe and put in 9 X 11 pan.)


A yummy corn casserole that takes just minutes to make! Option: Add 1/2 cup shredded cheddar cheese.
