Souffle au Fromage
ingredients
- 2 tablespoons of Beurre
- 2 tablespoons of flour
- 1/3 cup milk
- Nutmeg (sprinkle)
- salt
- pepper
- 4 egg whites
- 4 egg yellows
- 2/3 cup Emmental Swiss cheese
directions

- Set oven to 350 degrees

- Using a deep pan (on low to medium heat) melt 2 tablespoons of butter and mix in along with 2 tablespoons of flour
- 3
- mix in 1/3 cup of milk until it comes to a paste. If too thick, add more milk

- keep mixing and add a sprinkly of nutmeg, salt & pepper (to your own taste)

- Remove from the heat and gently stir in the yellow of 4 eggs

- Gently stir in the grated emmental cheese

- Beat your 4 egg whites until firm

- Gently blend the firm white eggs into the mixture with a spatula by folding, slowly, one fold at a time allowing it to stay fluffy and rise.

- Put into a 7.5" souffle dish and then into the oven for 20-30 minutes or until golden.
