Marie's No Mayo Summer Rice Salad
It’s a really lovely cold summer salad.
ingredients
- Salad:
- 2 cups long grain rice
- one large red onion chopped
- 2 peppers -- one red and one green chopped
- bunch of scallions
- 2 cans of black beans drained
- chicken bullion
- bay leaf
- Dressing:
- 1/4 cup orange juice
- 1/4 cup olive oil
- big bunch cilantro
- 1/4 cup red wine vinegar
- chili pepper
- cumin
- salt and pepper if needed
directions

Cook rice until al dente in chicken bullion with the bay leaf. Drain and cool.

Mix seasoned rice, onions, scallions, pepper and black beans in big bowl

In blender or food processor blend until fine the oil, vinegar and orange juice with the bunch of cilantro -- add cumin and chili to taste.

Mix with rice and vegetable mixture until fully blended. This keeps really well and even tastes better sitting for a day in the fridge.

I usually don't use measurements when I make this so feel free to tinker.
