Homestyle Macaroni & Cheese
ingredients
Macaroni- 8 oz. pkg elbow macaroni, cooked to al dente and drained.
- 3 T. butter
- 3 T. flour
- 2 tsp. dry mustard
- 3 cups milk
- 1/2 cup minced onion (microwaved to soften)
- 1 bay leaf
- 1/2 tsp paprika
- 1 large egg, tempered
- 2 -12 oz pkgs. sharp cheddar cheese
- 1 tsp. kosher salt
- 3 T. butter
- 1 cup plain panko bread crumbs

In medium saucepan melt butter and whisk in flour and mustard. Stir constantly for 5 minutes.

Make sure all lumps are gone.

Stir in milk,onion, bay leaf, and paprika. Simmer 10 minutes and remove bay leaf.

Take 1/2 cup mixture out and mix with egg. Return egg mixture to main pot.

Add 1 1/2 bags of cheese and mix well.

Season to taste with salt and pepper.

Fold in macaroni and pour into baking dish. Top with cheese. Top with bread crumbs. Bake at 30-45 minutes at 350 until top is golden brown.
