ingredients

Macaroni
  • 8 oz. pkg elbow macaroni, cooked to al dente and drained.
  • 3 T. butter
  • 3 T. flour
  • 2 tsp. dry mustard
  • 3 cups milk
  • 1/2 cup minced onion (microwaved to soften)
  • 1 bay leaf
  • 1/2 tsp paprika
  • 1 large egg, tempered
  • 2 -12 oz pkgs. sharp cheddar cheese
  • 1 tsp. kosher salt
Topping
  • 3 T. butter
  • 1 cup plain panko bread crumbs

directions

    In medium saucepan melt butter and whisk in flour and mustard. Stir constantly for 5 minutes.

    Make sure all lumps are gone.

    Stir in milk,onion, bay leaf, and paprika. Simmer 10 minutes and remove bay leaf.

    Take 1/2 cup mixture out and mix with egg. Return egg mixture to main pot.

    Add 1 1/2 bags of cheese and mix well.

  • 6

    Season to taste with salt and pepper.

  • 7

    Fold in macaroni and pour into baking dish. Top with cheese. Top with bread crumbs. Bake at 30-45 minutes at 350 until top is golden brown.
