justine's Potatoes with Cheese
Justine’s was a very well-known, elegant Memphis restaurant with the highest national ratings in town.
ingredients
- 4-5 cups of cooked, peeled & sliced potatoes
- 1/4 cup flour
- 1/4 tsp pepper
- dash cayenne
- 1 tsp salt
- 2 cups Milk
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1 stick butter
- 2 cups grated cheddar cheese
directions
melt 4 TBS butter in a saucepan. Saute’ onion and celery for 3-5 minutes. Add flour and stir till smooth. Add 1/2 cup cheese and milk and stir untill well mixed. Mix with potatoes in a casserole. Top with remaining cheese and dot top with remaining butter. Bake at 400 about 20 minutes until edges are brown and bubbly hot.
