Party Chicken

ingredients

  • Cooking spray
  • 1/4 c. flour
  • Large zip lock bag
  • 4 boneless, skinless chicken filets
  • Salt/pepper to taste
  • 1 can cream of chicken soup
  • 1/2 c. mayonnaise
  • 3 T. butter
  • 1 1/2 c. panko bread crumbs (Japanese bread crumbs)
  • 1 c. shredded cheddar
  • aluminum foil

directions

Preheat oven to 350°. Coat baking dish with cooking spray. Microwave 3 T. butter until melted. Place flour, salt & pepper in zip lock bag. Seal bag; shake to coat. Arrange chicken in baking dish. Combine soup and mayonnaise. Spread over chicken pieces. Stir bread crumbs, cheese and butter together. Crumble mixture over the top of the chicken. Bake for approximately 30 minutes. Top will be golden and temp gauge should read 165°.

Serve with rice medley, long grain wild rice or risotto, broccoli florets and rolls.
