Dorothy's Kansas-Style Barbecued Chicken Pizza
Vivian’s favorite foods are ribs and pizza. She dislikes radishes.
ingredients
- 2 (10-oz) cans refrigerated pizza crust
- 1 cup barbecue sauce
- 3 cups cubed cooked chicken
- 8 oz. (2 cups) shredded pizza cheese
- 1 (11-oz.) can Mexicorn (whole kernel corn, red and green peppers), drained

Heat oven to 425°F. Lightly grease or spray 2 cookie sheets with nonstick cooking spray. Unroll 1 can of dough; place on greased cookie sheet. Starting at center, press out dough with hands to 14x11-inch rectangle. Repeat with second can of dough and cookie sheet.

Bake both crusts at 425°F. for 7 minutes or until set.

Remove crusts from oven. Spread 1/2 cup barbecue sauce over each crust. Top each with chicken, cheese and corn.

Return to oven; bake an additional 8 to 10 minutes or until cheese is melted and crust is golden brown. Cut into squares to serve.
notes
To make a thick-crust pizza, pat each can of dough into a 12x8-inch rectangle. Reduce the total amount of barbecue sauce to 3/4 cup. You may need to bake them an extra minute or two.
