Freeze the dough to firm it up after you mix it to make it easier to work with. Or you can make these as drop cookies. Just flatten the top slightly for the meringue.

  • 2 1/4 cups confectioners’ sugar, plus more for rolling
  • 15 ounces sliced almonds, with skin (about 4 1/2 cups)
  • 1 1/4 teaspoons ground cinnamon
  • 3 large egg whites, room temperature
  • 2 teaspoons finely grated lemon zest
