These take a little time, but they are so worth it.

ingredients

  • 8 8" round spring roll wrappers
  • 2 c. shredded Bibb lettuce or cabbage
  • 8 oz. fresh or frozen cooked, peeled, and deveined shrimp, coarsely chopped
  • 1 c. shredded carrot
  • 1/2 c. sliced green onion
  • 1 tbsp. rice vinegar
  • 2 tbsp. creamy peanut butter, room temperature

directions

    Fill a shallow dish with warm water. Dip each spring roll wrapper in water, place between damp paper towels for 10 minutes.

  • 2

    In a large bowl, mix together rice vinegar and peanut butter. Then combine lettuce or cabbage, shrimp, carrot, and green onion. Toss.

  • 3

    Place approx 1/2 c. of mixture a 1/2" from the bottom edge of the wrapper. Fold the bottom edge over the filling. Fold the sides over and roll up. Repeat with the remaining filling and wrappers.

Serve with bottled peanut sauce or try the ginger dressing recipe.
