Vegetable Soup
ingredients
- 3 tablespoons olive or vegetable oil
- 1 yellow onion, diced
- 1/2 leek, diced
- 2 carrots, diced
- 1 stalk celery, diced
- 1/2 cup diced turnip
- 8 cups vegetable broth
- 2 plum tomatoes, peeled, seeded and diced
- 1/2 cup diced peeled yellow potato
- 1/2 cup lima beans
- 1/2 cup corn kernels
- 1/2 cup chopped flat leaf parsley
- salt and pepper

Heat oil in a large pot. Add onion, leek, carrots, celery, cabbage and turnip. Cook 10-15 minutes, stirring occasionally.

Add broth, bring to a simmer and cook for 10 minutes.

Add tomatoes, potato, lima beans and corn. Continue to simmer until potatoes are tender, 30-35 minutes.

Add parsley, salt and pepper to taste.
