Jan's Couscous Salad

ingredients

  • 1 box dry couscous, prepared
  • 1 can drained chick peas
  • 1/2 C. feta cheese
  • 1/4 C. chopped parsley
  • 1 red pepper, chopped
  • 1/4 large Vidalia onion, chopped
  • 1 cucumber, peeled, deseeded, and chopped
Dressing
  • 1/4 C. McEvoy Ranch Extra-Virgin olive oil
  • juice of 2 - 3 limes
  • salt and fresh ground pepper to taste
  • 1/4 cup freshly grated parmesan cheese

  • 1

    Prepare couscous according to package directions.

  • 2

    Wash and chop vegetables.

  • 3

    Whisk ingredients for dressing until well combined.

  • 4

    Toss vegetables, couscous and dressing to combine and chill until ready to serve.
