Jan's Couscous Salad
One of our customers in Birmingham, Alabama shared this tasty pot-luck recipe with us. Enjoy!
ingredients
- 1 box dry couscous, prepared
- 1 can drained chick peas
- 1/2 C. feta cheese
- 1/4 C. chopped parsley
- 1 red pepper, chopped
- 1/4 large Vidalia onion, chopped
- 1 cucumber, peeled, deseeded, and chopped
- 1/4 C. McEvoy Ranch Extra-Virgin olive oil
- juice of 2 - 3 limes
- salt and fresh ground pepper to taste
- 1/4 cup freshly grated parmesan cheese

Prepare couscous according to package directions.

Wash and chop vegetables.

Whisk ingredients for dressing until well combined.

Toss vegetables, couscous and dressing to combine and chill until ready to serve.
