John Elway soup
A very hearty and meaty soup. (guy’s love it)
ingredients
- 2 tblsp. butter
- 1-2 mediun onions, chopped
- 1 clove garlic, minced
- 2 lbs ground beef
- 1 lb. jimmy Jean sausage
- 3 cans beef broth
- 1 medium can tomato sauce
- 1 large can diced tomatoes w/green chile’s
- 1 cup diced potatoes with skin
- 1 cup diced carrots
- 1 cup diced celery
- 1 can french-style beans
- 1 cup dry red wine or water
- 1 tblsp. parsley
- 1/2 tsp. basil
- salt and pepper to taste
directions
In a large pot, melt butter; saute onions and garlic. Remove onions and garlic from pot, set aside; fry ground beef and sausage, and drain grease. Add all ingredients meat; bring to a boil; reduce to simmer; cook until veggies are done, about an hour. season to taste.
