Wedding Soup
Dad helps with this soup, making teeny tiny meatballs.
ingredients
- 1/2 cup orzo, uncooked
- 1/2 lb. extra lean ground beef
- 1 egg, slightly beaten
- 2 T. fine dry bread crumbs
- 1 T. grated Parmesan cheese
- 1/2 tsp. each basil and onion powder
- 1 - 46 ox. can chicken broth or stock
- 2 C. thinly sliced escarole or spinach
- 1/3 c. finely chopped carrot
- Grated parmesan cheese
directions
Combine meat, egg, breadcrumbs, cheese and shape into small meatballs. In large soup pot, heat broth to boiling, stir in meatballs, orzo, escarole and carrot. Return to boil, reduce heat to medium. Simmer 10 minutes. Stir frequently. Serve with more cheese.
