Beef Stroganoff
ingredients
- 1 pound beef chuck roast
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 2 green onions, sliced
- 2 tablespoons flour
- 2/3 cup beef broth
- 1/2 teaspoon mustard
- 1 (4 ounces) can sliced mushrooms, drained
- 3 tablespoon sour cream
- 3 tablespoon white wine
- Salt and pepper to taste

Cut meat into 1/2 inch thick by 2 inch long strips and season with salt and pepper.

In large skillet, add butter and brown beef strips. Once browned, put aside and sauté onions for 3-5 minutes. Set onions aside.

Stir flour into juices in skillet. Pour in beef broth and bring to a boil, stirring constantly. Lower the heat and stir in mustard. Add meat and onions back in pan. Cover and simmer for one hour or until meat is tender.

Five minutes before serving, stir in the mushrooms, sour cream and white wine. Heat briefly then add salt and pepper to taste.
