Spinach Madeline
ingredients
- 3 pkgs frozen chopped spinach
- 4 Tbsp butter
- 2 Tbsp flour
- 2 Tbsp chopped onion
- 1/2 cup evaporated milk
- 1/2 cup veg liquor
- 1/2 teaspoon pepper
- 3/4 teaspoon garlic salt
- 1/2 teaspoon salt
- 6 oz roll garlic cheese
- 1 Tbsp worcester sauce
- Red pepper to taste
directions
Cook spinach according to pkg direction reserving veg liquor. Melt butter in sauce pan over low heat, add flour, stirring until blended and smooth but not brown. Add onions and cook until soft but not brown. Add liquid slowly stirring constantly to avoid lumps. Cook until smooth and thick, continue stirring. Add seasoning and cheese (cut into small pieces). Stir until melted and top with breadcrumbs and slivered almonds. Bake until bread crumbs are brown. This should be refrigerated overnight to improve the flavor. Can also be frozen.
