Meat Stuffed Manicotti
ingredients
- 1/3 to 1/2 cup butter
- 1 cup minced celery
- 1/2 cup minced onion
- 3/4 cup minced mushrooms
- 1 lb. ground beef (turkey, buffalo)
- Salt and pepper to taste
- 3 T flour
- 3 T butter
- 2 1/4 cups milk
- 1/4 tsp nutmeg
- 3 T Parmesan cheese, grated
- 1 15 oz. jar spaghetti sauce
- 1 box (12) manicotti noodles
- 1/2 cup bread cubes
- 2 egg yolks
- 1 T tomato paste
- 1/2 cup white wine

Simmer together 1/3 cup butter, celery, onion, mushrooms, ground meat, salt and pepper until meat is cooked through. Add bread crumbs, yolks, tomato paste and wine. Stir to blend and remove from heat.

Make a cream sauce by melting 3 T butter and mixing in 3 T flour. Gradually add milk until sauce thickens. Add cheese and stir just to melt. Pour 1/2 the spaghetti sauce into the bottom of a 9 X 13 baking pan. Top with ribon of 1/2 the cream sauce.

Cook the manicotti noodles 4 at a time for 8 minutes in boiling salted water. Remove with a slotted spoon and rinse manicotti to cool slightly. stuff each manicotti with meat sauce and lay side by side in the baking pan on top of sauces. Repeat with remaining manicotti. When all the noodles are stuffed, top them with the remaining spaghetti sauce and ribbon of cream sauce.

Cover with foil and bake at 350° for about 30 minutes or until bubbly.
