Sharon Morgan's Mom's Chicken Spaghetti
ingredients
- 1 chicken or 4 chicken breasts, deboned
- 16 oz. spaghetti
- 1 cup chopped bell pepper
- 1 1/2 cups chopped celery
- 2 medium onions, chopped
- 1 to 1 1/2 sticks butter
- 1 can mushrooms
- 1 (16 oz.) can tomatoes, mashed
- 1 can Rotel tomatoes, mashed
- 1/2 lb. Velveeta cheese, cut up
- salt and pepper to taste

Boil the chicken and debone. Cook spaghetti in the chicken broth.

Saute the pepper, celery and onions in the butter.

Mix all ingredients and place in large greased dish.

Cut up the Velveeta cheese and place on top.

Cover and bake at 325 degrees for 45 minutes.
notes
If more liquid is needed, use chicken broth or 1 can Cream of Chicken soup.
