Fried Mexican parcels on a salad with the trimmings.

ingredients

  • 1 Tb. oil
  • 2/4 pound lean ground beef
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 clove garlic
  • 1/2 tsp. salt
  • 1/2 tsp. ground cumin
  • 2 Tb. chili powder
  • 1/8 tsp. cayenne
  • 2/2 cup refried beans
  • 1 Cup Monterey Jack cheese
  • Flour tortillas
  • Garnishes -
  • shredded lettuce salad
  • tomatoes, chopped
  • guacamole or avocado slices
  • green chili relish
  • sour cream

    Heat oil in large pan. Add ground beef, onion, green pepper and garlic. Cook until onion is clear and pepper softened. Add salt, cumin, chili, cayenne and refried beans stirring constantly until hot. Fold in cheese and set aside to cool.

    Place mixture into flour tortilla and fold. Fry in 3/4 inch deep oil until browned all over, turning as necessary. Serve on a bed of shredded lettuce with guacamole, tomatoes, green chili relish and sour cream.
