Sushi Salad

ingredients

Rice
  • 1 1/2 c sushi rice, uncooked
  • 1 3/4 c cold water
Dressing
  • 1/2 C rice vinegar
  • 1 tbsp oil
  • 1 tbsp toasted sesame oil
  • 1 tbsp soy sauce
  • 1 tsp fresh ginger, grated
  • 1/2 tsp garlic, minced
  • 1/4 tsp wasabi powder
Salad
  • (add/take out whichever ingredients you like in your sushi)
  • 1 avocado, cut in cubes
  • 1 cucumber, julienned
  • 1/4 c red onion, minced
  • 1/4 c scallions
  • 2 tbsp toasted sesame seeds (preferably white and black)
  • 2-3 sheets of toasted nori (seaweed) ripped into strips

    Cook sushi rice as directed on package.

    In a small bowl, combine dressing ingredients. Slowly add dressing to hot rice, tossing gently. Add avocado, cucumber, onion, scallion, sesame seeds, and nori. Toss and sprinkle with some extra nori and sesame seeds.
